Looking for an idea for dinner that everyone will enjoy? Even the pickiest eater?! Well look no further than this dish here! So simple and easy to prepare yet so amazingly delicious!
– three large chicken breasts, cooked and chopped into small pieces
– two sleeves Ritz crackers, crushed into fine crumbs (about 70 crackers)
– 1 stick melted butter
– 2 tbsp poppy seeds
– 2 cups sour cream
– 1 can cream of mushroom soup
– a deep 8×8 baking dish
First layer: chicken. I typically bake my chicken breasts for 30 minutes at 350 degrees, give or take a few minutes (depending on the size/thickness of the chicken). Allow the chicken to cool a few minutes before cutting it into small chunks. Once the chicken is all cut up, place the pieces in a medium size bowl and set aside.
Next layer: creamy filling. In a small bowl, mix together the sour cream and mushroom soup. Set aside.
Last layer: crunchy topping. In another small bowl, mix together the crushed Ritz crackers, poppy seeds, and melted butter. Set aside.
Now comes the assembly part! In the baking dish, layer half the chicken, half the cream mixture, and half the crumb mixture (in that order).

Repeat with the rest of the ingredients: chicken, cream, crumbs!
Bake uncovered at 350 degrees for about 30 – 40 minutes, or until the crumbly topping is golden brown and bubbling.
This dish is so tasty, even my picky two-year old loves it!!! Although I’m sharing this with you during winter, you could enjoy this meal all-year-round! It’s that good!!!
I made some mashed potatoes and oven baked zucchini to go with the poppyseed chicken – and they all paired so well together!
This meal also makes a great gift! For example, whenever one of our friends has a baby, I buy some of those aluminum baking dishes and prepare this exact meal for them! So if you’re one of my friends reading this and you are pregnant, expect this meal in your future! 🙂
