Cookies & Cream Cupcake

Today is a wonderful day because 1.) we got out of school at 1:05 (we usually dismiss at 3:11) and 2.) WE ARE ON SPRING BREAK!!!!!!!!!!!!!!!!! A week without whiny kids (and their parents) – it will be sublime! Although hubby and I are going to be spending the break at home working on the house, we’ll probably go to Myrtle Beach for a day. I just hope it’s not too cold to lay out on the beach!

Rehearsals forย Grease are going well. I am happy to report that I haven’t had another run-in with the parent I mentioned last week ๐Ÿ™‚ Tomorrow, some of the cast members and myself are gathering at one of the kids’ house to watch the movie. The parents are providing the pizza, and I am providing the cupcakes. I wanted to try a new flavor and I really wanted to use a vanilla based cake. So I decided to go with a cookies and cream cupcake. I found a recipe from Lizzy over at Your Cup of Cake. I use a lot of her recipes…they are just so stinking good!! Maybe I should invest in buying her cookbook?!

As I am writing this post, I am in the middle of baking the cupcakes. Typically when I use Lizzy’s recipes, my batter makes only enough for 22 cupcakes. This time however, I’ve gotten 27 out of the batter – score!! The recipe says to put part of the Oreo at the bottom of the liner – this was tricky for me. I tried to twist the cookie so that the cream would stick to one side. But for a lot of my cookies, the cream was stuck to both cookie parts. Being a perfectionist, this irked me greatly. I kept twisting and twisting until I had enough cookie parts that met my satisfaction. Hubby and I munched on the ‘bad’ cookie parts ;-D

Phew! I just finished making the frosting and piping it onto the cupcakes. I’m going to decorate them with half an Oreo but I won’t stick the cookie in the icing until just before I leave for the party. Because of the moisture in the frosting, the cookie would absorb it and become mushy. And I’m pretty sure nobody likes a mushy cookie!

Like usual, I doubled the frosting and had too much, but I would much rather have too much than not enough. I’ve put it in a plastic container and set it in the freezer. I’ll use it when I make these cupcakes again. Aren’t they cute? I would have eaten one tonight, but I had already eaten some Oreos and frosting. I didn’t want to over do it ;-P I’ll try one tomorrow and let you guys know how they turned out!

So tomorrow, before I go to the party, I will be making the Easter cupcakes. I’m pretty excited about them! I really hope everything goes well and that my client and her family likes them!
